Light Breakfast or Lunch – The Food Diaries

I love to nourish my body with healthy foods, and on top of that I love to cook. I am also trying to shed my freshman 15, tone up, and ultimately feel good. I don’t really believe in scales, but I believe in mirrors, pictures, and clothes, and like most people I like to look and feel good in all three. Since I was little, my mother has always made it a priority to feed our family naturally and organically. She is the woman who would rather buy the $7 milk than put that money towards the newest gadget. She has really taught me how important it is to take care of your body first and worry about the materialistic items later. I totally have more to rant about, but I am really excited to show you a recipe that I make quite often because it is so filling, light and YUMMMMYYY!!!!

It’s so simple. It is just an egg white omelet with tomato, spinach, and a sprinkle of salt, pepper, and parmesan.

I start of by prepping my pan with coconut oil. Yes, it’s a saturated fat, but it contains so many essentials that your body craves. Your body needs and craves fats. You should give it to your body in a healthy form such as the coconut oil. The best part is, is that it is flavorless, makes the pan non-stick, and boosts the nutrition of this dish.

I then crack three egg whites into the bowl.

I add some chopped tomatoes.

I whisk that mixture together and pour it into the pan.

I then take some of the spinach, here I have chosen to use the Organic Girl 50/50 spring mix, and I rip it up and drop it in the pan. I really love this brand because it is already washed and ready to go!

I then add a sprinkle of salt and pepper and flip it. Then I garnish with a shake of parmesan.

…And it should turn out something like this 🙂
